I have left that in the fridge a couple of days, however I normally vacuum seal separate bags with sufficient for a sandwich in every bag and also freeze within a few days.

Personally i don"t think it"s most likely to go bad, although at some point it will acquire moldy. It generally doesn"t last long in mine house, so I"ve never had actually to find out.

I"m no a food security expert. As jfmorris says, usually you desalinate, for this reason while it is cured, it"s not favor you are keeping it long term. However in a refrigerator vacuum sealed, and still somewhat cured, I would certainly be tempted come go much longer than a week. That"s me, I choose to live on the edge.
